Simple Baked Oatmeal
2 eggs slightly beaten
3 cups cooking oats (or I did 1 C steel cuts oats grinded and 2 1/2 C rolled oats)
1/3 C brown sugar or agave necter
1 C soymilk (lessen milk if using agave)
1/2 C apple sauce
1/2 C raisins
2 tsp baking powder
1tsp salt
1 1/2 tsp vanilla
1 tsp pumpkin pie spice
1tsp cinnamon
Combine all ingredients and press into a square baking pan and bake at 350 for 25 minutes.

I made this for the boys this morning! It's in the oven now and I can't wait to try it! Woke up, saw the recipe, put it in the oven!
