Greek Chicken Bake

I ventured out tonight with left over grilled chicken- little bit of this...little bit of that and whola!

Chicken breasts already cooked (this if for about 3-4 chicken breasts) (nice if they have a bit of basic seasonsing already like olive oil,garlic,herbs etc.)
Handful of sun-dried tomatoes (ones in oil- from costco)

1/4 red onion sliced
2 zucchini chopped
1 1/2 Tbs minced garlic
salt to taste

Saute all ingredients until cooked
place on top of cooked chicken
drizzle with olive oil
Place in oven on high broil for about 5 mins- watch it until it browns

.....wow carrot cake today as well- that recipe is coming!

Iced soy chai

So as most of you know I am a Buckys, StarBuckles.....STARBUCKS fan :)- unfortunately it is not cheap and I have been convicted at my spendings there- we just can't do it. So this afternoon while I was at home baking a lovely carrot cake (recipe coming) I thought hmmm if I'm not going to get a soy latte what should I create- as I didn't really feel like coffee anyway. So I pulled out my Tazo Chai tea bags- that I would never usually buy but the lovely Jess left them when her and her hubby left. Anyways I created a simple, healthy yummy chai.....

1 Tazo chai teg bag- steeped in about 1 tbs boiling water for about 10 mins- stirring at 5 mins
Add some cold soy milk or regualr
add some ice
add a few shakes of stevia/or some honey and there you have it!

Berry Mango Sorbet

1 very big handful of frozen berries
half a ripe mango
1 lilikoi
dash of soymilk
drop or so of agave nectar (or whatever sweetener)
coconut to dust the top

Blend it all up on high to make a yummy sorbet sprinkle with the coconut & Enjoy!

not too mysterious.....

Deuteronomy 30:11

For this commandment which I command you today is not too mysterious for you, nor is it far off. Is is not in heaven that you should say, 'Who will ascend into heaven for is and bring it to us, that we may hear it and do it?'Nor is it beyond the sea, that you should say, 'Who will go over the sea for us and bring it to us, that we may hear it and do it?' But the word is very near you, in your mouth and in your heart, that you may do it.

vs. 19 I call heaven and earth as witnesses today against you, that I have set before you life and death, blessing and cursing; therefore CHOOSE LIFE, that both you and your descendants may live; THAT YOU MAY LOVE THE LORD YOUR GOD, THAT YOU MAY OBEY HIS VOICE, AND THAT YOU MAY CLING TO HIM, FOR HE IS YOUR LIFE AND THE LENGTH OF YOUR DAYS......

What would that look like if we truly loved the Lord whole-heartedly clung to Him and Him alone- not false comforts- or even just being comfortable where we are at in general......And truly set our sights on HIM ONLY- we would have such fullness in life- when challenges would come our way- we could still say - I count it ALL JOY- even trials and tribulations- because our joy would be in HIM our comfort in HIM our everything in HIM- let us be not only hearers of the would but doers!

5 wonderful years


5 years ago today I married the most incredible man in the whole world
My husband and truly my best friend
I have never had someone I can share absolutely anything with and feel completely safe
and confident that he would never tell anyone
not only does he listen to my thoughts, fears and dreams he shares in them with me
He understands the best he knows how and is so tender kind and loving
he is so giving
He is a lover of God and so desperately want to be closer to Jesus
He is not afraid of what man thinks
and fears God alone
