Tips from the Kitchen for a busy mum :)



Just thought I'd share some fun healthy way's to always get your salad and vege intake for the day. We all know what it's like to rush in the door at midday as we are trying to lay our baby down for their nap, pick up around the house, start laundry and oh yes eat! We are hungry so whatever we see in the fridge we grab. So some helpful things I do to save me from eating whatever is in site and make sure I eat a proper meal, oh and of course make it healthy is to have some things already cooked in advanced or on hand:
  • Quinoa- It's KEEN-WAH :) as the health food experts say- I add this to salad's as it is an excellent source of protein and yummy.
  • hummus
  • cooked pea's (to add to salad)
  • lettece already chopped (the night before I usually make a large salad that way I can have it at lunch the next day)
  • pan toasted seeds (pumpkin and sunflower-spritz some Bragg's on them!)
  • nutritional yeast (sounds terrible but tastes great added to anything like salad's, soups, vege's etc. spray some Bragg's Ammino acid on top and olive oil)
  • 'flat out' wrap's (from Costco)
  • Roasted vege's (again do a batch the night before- anything from tomato's with olive oil and garlic to onion and sweet potato)
  • Olive oil (I dress all my salad's in olive oil-try adding lemon juice with some garlic and balsamic and a dash of brown sugar)
  • Pumpkin pie spice- add to hot chocolate, yogurt with some honey, oatmeal with raisins, chopped almonds and honey, sweet potato with honey then bake them in oven, also on pumpkin oh and of course pumpkin pie! :)
  • Coffee. A must! Always have this on hand! :)
So there is a small list of yumminess to add to your life :) Oh by the way you don't have to be a "busy mum" to enjoy this :)

I was made for LOVE

Saturday- oh sweet Saturday- family day-beach day- my day :) I even got to "sleep in" until 7:30! Wake up to freshly made coffee and enjoy my baby girl and husband. Took a lovely drive up north and explored a little, ended up at one of the beaches up there. Naomi was SO entertained pouring water on mummy and daddy's head from one of her buckets, ran in and out of the water and then crashed on the drive home.

Tonight we all snuggled up on our bed and watched about 20 minutes of Milo & Otis until Naomi was just about asleep. A few minutes ago I went in to watch her sleeping (which if one of my favorite things in the world!-she is SO peaceful and sweet looking!) and I just loved on her and I could feel her love for me- I could feel the love of my husband as he walked into the bedroom tonight and looked in my eyes and just played and sung with his guitar, I could feel the love of my family as we all shared a meal tonight- I love to feel love and I love to give love, what would life be without anyone to love or anyone that loved me- love is sacrifice- love is hope, love is everything we need to keep us alive- love is what sustains us for another day in the journey= love it sweet, love is painful but love is all I have to give and love is all I have to receive , love is all I can take from this life and love is what I was made for in this life, truly,
I was made for Love

Greek Chicken Bake

I ventured out tonight with left over grilled chicken- little bit of this...little bit of that and whola!

Chicken breasts already cooked (this if for about 3-4 chicken breasts) (nice if they have a bit of basic seasonsing already like olive oil,garlic,herbs etc.)
Handful of sun-dried tomatoes (ones in oil- from costco)

1/4 red onion sliced
2 zucchini chopped
1 1/2 Tbs minced garlic
salt to taste

Saute all ingredients until cooked
place on top of cooked chicken
drizzle with olive oil
Place in oven on high broil for about 5 mins- watch it until it browns

ENJOY




.....wow carrot cake today as well- that recipe is coming!

Iced soy chai

So as most of you know I am a Buckys, StarBuckles.....STARBUCKS fan :)- unfortunately it is not cheap and I have been convicted at my spendings there- we just can't do it. So this afternoon while I was at home baking a lovely carrot cake (recipe coming) I thought hmmm if I'm not going to get a soy latte what should I create- as I didn't really feel like coffee anyway. So I pulled out my Tazo Chai tea bags- that I would never usually buy but the lovely Jess left them when her and her hubby left. Anyways I created a simple, healthy yummy chai.....

1 Tazo chai teg bag- steeped in about 1 tbs boiling water for about 10 mins- stirring at 5 mins
Add some cold soy milk or regualr
add some ice
add a few shakes of stevia/or some honey and there you have it!

Berry Mango Sorbet

1 very big handful of frozen berries
half a ripe mango
1 lilikoi
dash of soymilk
drop or so of agave nectar (or whatever sweetener)
coconut to dust the top

Blend it all up on high to make a yummy sorbet sprinkle with the coconut & Enjoy!

What would that look like if we truly loved the Lord whole-heartedly clung to Him and Him alone- not false comforts- or even just being comfortable where we are at in general......And truly set our sights on HIM ONLY- we would have such fullness in life- when challenges would come our way- we could still say - I count it ALL JOY- even trials and tribulations- because our joy would be in HIM our comfort in HIM our everything in HIM- let us be not only hearers of the would but doers!

5 years ago today I married the most incredible man in the whole world

Naomi Song.....I LOVE YOU



So proud of my little girl. Naomi Song is true to her name- beautiful pleasant sweet delight
She is such a joy to me. It's hard to believe she is already 15 months!

Some fun things she is saying and doing now....

The other day we were on a walk and I was singing to her "Je-eeee-sus your names my reward"
and then I her this sweet little voice say "Jesus"!
Oh Naomi you bless me

She loves giving her cuddles & kisses to her baby-dolls, trying to put their diapers on:) and 'rocking' them to sleep and giving them a bottle.
She is SO affectionate! She saw her little twin friends last night and immediately walked up to give a cuddle! :)

She now eats with a fork and spoon! you should watch her try and spear her peas! so much thought and effort involved :)

She loves lifting her arms to "Praise the Lord!"

and I could go on I suppose but I won't- just wanted to give my little darling Naomi a shout out :)

Lillikoi green smoothie!

This is what we all enjoyed for breakfast this morning :)

1 papaya
1 banana
1 lillikoi
1/4 C plain yoghurt
1 tbs shredded coconut
1tsp spirulina
handful of ice
half water half soy milk just above fruit- add more if necessary
1tbs agave nectar or honey

BLEND UP AND ENJOY!

I LOVE BEING A MUMMA~



Sometimes I just want to shout it from the roof tops...I LOVE BEING A MUM! What is it about motherhood that is so sweet? Tonight I was singing to my little Naomi as I lay her down in her crib and she began humming along with me just gazing into my eyes.

Being a mum is like eating dark chocolate- so good! so sweet! so satisfying......satisfied that's how I feel- I don't miss my childless days one bit- yes they were fun, but how much more fun is it when you get to do things like coming up with the most ridiculous dances and songs and 'performing' for them while they crack up laughing and what you to do it again and again. Yep I do it all the time :) added bonus they think you are the best singer and dancer in the whole world also.....well maybe not if you are still doing it by the time they are 18.

What a privilege it is to not only raise them but to raise them in the ways of the Lord! Oh the joy that fills my heart knowing that already Naomi is learning to be more like her heavenly father.

A friend loves.....

Yesterday was my birthday- 25 years ago- yep you guessed it...I was born! Yeah- whoo hoo yippee- pop bang pop- (those were the fireworks going off :)
I was overwhelmed and absolutley blessed- my hubby had been planning a little surprise for me along with one of my bestfriends and my mumma. He was so excited for me- he kept saying- you have a fun weekend ahead of you.....and yes I did!

I was pondering what life would be like without friends- I'm not talking about acquaintances, co-workers or peers but true deep friendships. As I was looking around the room yesterday and listening to all my closest girl friends affirm me in who I was- I was truly blown away of the goodness of the Lord. He is so faithful if we are faithful to Him. True deep real vulnerable Friendships have not come easily. As women it is so easy to judge, compete with one another, gossip and then isolate because of the pain of all these things and feel self pity and then feel even worse because we feel like we have no one to really pour our heart out too. I have learned this- it has been a long journey of fighting for my friendships. I am one of those people that "shares my pearls" because I long to go deeper with that person. If there is advice I can give to anyone that feels alone and like they have no true friendships it is INITIATE, INITIATE, INITIATE. Don't wait for them to call you, you call them, don't assume what they are thinking- ask them- communicate- above all LOVE because a friend loves at ALL TIMES even in our weakest moments and most horrible times- we love because He first loved us.

A perfect day!


Today was wonderful! I am SO blessed- Our little family headed out this morning to Hapuna Beach. Our little Naomi slept until 11am as we relaxed in the sun (we did what!? :) I actually got to 'lay out' without having my little Ne Ne crawl all over me- sit on my back backwards- which she did do later and pull on my bikini ties :) She then work up very happy and we had a blast! I brought bubbles which she was trying so hard to unscrew the bottle and finally gave in- walked up to her daddy and gave it to him to saying "dadda...?" in other words please help- so cute- we then all blew bubbles, swam, played, ate, giggled and then packed up for the day and headed out. She then crashed out for 3 hours! WOW! I love my family I feel so blessed- thank you Jesus!

Count it all JOY





What an incredible journey we are on! Yes we all go through "stuff" and yes it hurts, it's painful, it's frustrating, yet we get back up again- fix our eyes on HIM and HIM alone and continue to walk in His ways and His paths- because He is ultimately the author and finisher of our faith!

WOW- did that just say lacking nothing!? Being patient isn't always easy but the end results are beautiful. Think about a pregnancy- oh the waiting is painful- all you want to see is your precious little baby but what would happen if you delivered say 6 months into your pregnancy- not good right! So let us persevere through our trials being patient- knowing that the end result will be beautiful.

Delicious Black Bean vege burgers- photo to come!


I wanted to have a little adventure tonight so I thought it would be fun to make some burgers to grill at the beach- so our little family packed up our gear and headed to the beach late this arvo- it was perfect- we took our little grill and grilled it up! Naomi got to ride in her red wagon too! :)
Oh I know I don't have pics to match with the blog yet- I'm still working on that! :)


2 C black beans
1 Tbs olive oil
1/2 C chopped onion
1/2 C chopped red bell pepper
1/2 C corn
2 Tbs minced garlic
1/4 C chopped cilantro
1/2 C breadcrumbs
2 Tbs mexican seasoning
1 tsp chili powder
salt to taste

Saute onion, red bell pepper & garlic with seasonings
mash beans combine with corn, breadcrumbs, cilantro & olive oil
mix in sautéed vege's

form into 1/2 inch thick patties & fry on medium heat flipping until browed or grill on medium heat on BBQ

Spread hamburger bun with avocado & dash of lime & salt
Add lettece, tomato & cheese

YUM!

Choose whom this day who you will serve!

We live in a world that 'serves itself' basically what can I get out of it for me..... a little while ago I heard the Lord say- "You shall have no other God's before me" (Exodus 20:3) What does that mean? All of us put high value on something- we spend time focusing on someone or something- weather it is family, our husband, our baby, exercise, people, meetings, being busy.......none of these are bad but have we made them into our god? Have I? What would it look like to truly have Jesus as first- it would mean sacrifice- it would mean laying down our rights taking up our cross and following Him- it would mean saying no to certain activities- it would mean loosing sleep and so much more- but when I ponder the cross and what our Lord and Saviour did for us- HE LAID DOWN HIS LIFE FOR US- then oh how we should be running and longing and whole heartedly saying YES I give ALL FOR THE SAKE OF KNOWING YOU. I do not what the day to come where I am standing face to face before my maker, my creator, my one and only Saviour and for Him to say- you did all these amazing things- but I never knew you.

Trying to begin this thing!


So here I am starting a blog! Blog what does that word mean anyways!? Well I thought I would finally begin even though I have no idea yet how to make this all pretty I will try and just put my thoughts on this page- I love writing but sometimes it takes me a while to get into the swing of it. I have been really wanting to post some of my yummy creations that I have been doing in the kitchen. Tonight I had my beloved friend over Mel- Mel is awesome- Mel is someone I truly trust- Mel you have been such a friend to me- even in those times of arkwardness( I can't spell :) you continued to "continue on". You truly inspire me! Oh so tonight I made grilled portabella mushrooms- so heres the secret recipie :)

Grilled garlic mushrooms

6 Tbs butter melted
2 Tbs minced garlic
5 Tbs soysauce

mix together- drizzle over mushrooms- brush bottoms of mushrooms with olive oil and grill on the barbie :) for 10 mins on medium heat- YUM

So I will post a photo next time :) As for now you can gaze on my handsome husband and beautiful baby and me :)
